Recipe: Easy Chicken Enchiladas - Serves 12

Here is a great meal idea for your supper... include this recipe, together with your low calorie smoothie for breakfast and lunch in a healthy lifestyle, that includes adequit fluid intake and regular excercise, for effective weightloss.


115g fat free cream cheese
1/4 cup green salsa
1/2 cup greek yogurt
1/3 cup chicken, shredded
1 cup 2% cheese
1 cup enchilada sauce
12 tortillas

Preheat oven to 375 degrees F (190 degrees C). Lightly spray an 8x8-inch glass baking dish with cooking spray.  Stir together the softened cream cheese, greek yogurt, and green salsa until blended. Add cooked chicken (add taco seasoning if needed) and shredded cheese. Evenly divide the filling among the tortillas, and roll the tortillas. Place into prepared baking dish. Cover enchiladas with the the enchilada sauce.  Bake in preheated oven until golden and bubbly, about 30 minutes. Allow to rest 5 minutes before serving.  Add mexican rice, refried beans, and corn as sides and it's a meal.
